Do you see and elephant?  I do.  My husband was going to eat this tasty little croissant  the other morning, showed it to me before he did and I yelled “STOP!”, I need to get a pic of that and put it on WordPress.

The croissant was so adorable I can’t stand it.  So, after the picture-taking and admiring it, my husband ate the little elephant croissant, but we have the memory!

Sauerkraut and Potatoes with Pork Hocks meat?

Okay, I have to be the first to admit that I have never cooked pork hocks.  The idea kinda turned me off at first.  I love ham, pork chops, pork sirloin roasts, etc., but, the thought of eating the meat from the leg of a hog left me a little unsettled.  Not sure why, but it did.

So, I started out on a journey to eventually use the hocks.  I kept looking at them in the freezer, picked them up, shuttered and put them down and closed the freezer.  Now mind you, my brother gave them to me, so you would think I would have no problem with my hubby and me consuming them.  Soooo not true!

So, this past Sunday, I decided to look on the ever amazing internet and find recipes for making ham hocks.  Lucky me.  I did! I chose the most simple way to make them.  I cooked them on low for 5 hours.  Yes, five hours.  I am always afraid of undercooked pork.  The recipe only said to cook them for 1.5-2 hours.  They are done…

Well, one of the recipes called for using collard greens.  We eat them, but a serving and we are good for the year.  The next option was using navy beans.  No, not picking and soaking beans.  The third was perfect for us and me.  The recipe was for sauerkraut.  Yum!

So, after cooking the hocks and buying sauerkraut the other day, I continued on with my adventure.   We love sauerkraut and potatoes, so I decided we would pull the meat and add it to the sauerkraut and potatoes after they cooked.  Well, I must tell you that it is fabulous!  My advice to you is to not shy away from the foods you have not eaten just because of the way they look or your preconceived thoughts on a food item.

Buy ham hocks and get cooking!

Tasty BBQ sauce

Here is a quick bbq sauce that makes your chicken really tender.

3 cups Kraft original BBQ sauce
1/2 cup beer (I used Icehouse)
3 Tbs. garlic powder
3 Tbs. creole seasoning
1 tsp. black pepper

Mix all ingredients together.. Pour mixture over chicken, cover and put in 340 degree oven and bake for 40 minutes. If grilling, baste chicken as turning on grill.

Your chicken will come out quite tasty and tender. Enjoy

Some updates…

Well, I updated the status on the quesadilla makers at Wal-Mart.  They are in and I am going to buy a couple for gifts this year.  They aren’t expensive and I bet they will be appreciated gifts this year.  I got my poppyseed filling to make cookies and cakes  for the holidays.  I guess I will start baking after Thanksgiving.  I don’t do a lot of baking for Thanks giving.  I just go and buy a Mrs. Smith pumpkin pie.   We really like them.

I bought the Woman’s World mag today.  They have the most adorable Halloween cake on the front.  I think I will make that for the weekend before the ghosts and goblins night.  I will snap a photo of it and post it after the cake is decorated.  Oh, I guess that is this weekend.  I will post the pic Saturday.

The Empty Baked Ruffles Bag…

Here lies the empty potato chip bag….

Oh, yes, it is empty.  I love the potato chips.  I have to force myself not to buy them.  They aren’t too salty and yet, so, crunchy!  I like them straight, dipped in French onion dip and the best way ever is with cottage cheese.  Low-fat, of course.  If you have never tried a potato  chip with cottage cheese, if you like cottage cheese, then you owe it to yourself to do it today!!  You will be washed away!!!!

Potato chips are one of the “perfect” foods in the world.  Too bad they are so darn fattening….

Another of My Loves….

It is a quesadilla maker by George Foreman.  I bought it two years ago at Wal-Mart and LOVE it!  I just had to let you know about it before I start making them for dinner for Mikey.

I really only see them around the holidays in Wal-Mart.  If you find one or get a chance to get one before the holidays, DO!  You will not regret it!

Nitrate Free Hotdogs for Dinner

Yes, I was so excited to see them in the store,  I literally squealed out “Oh, my gosh, NITRATE FREE HOTDOGS!”. Do you know how hard it is to find nitrate free hotdogs,  lunchmeats and bacon, etc.  Oscar Meyer makes them.  They come in regular size and bun length hotdogs.  I do not know how long they have been on the market, but now that I have found them I am in love. 

All of you Atkins diet folks that can’t eat meats with nitrates in them, are you in luck.  Go get ‘em!

B-B-Q Chip Chicken

I love this chicken!  I had to start out saying that.  My mom made this chicken for the family when we were just kids.  Trust me, that was a few years ago.  I have made this chicken for many years and it is always good.  Again, a recipe that is probably out there, but I have not seen a recipe for it.

This is a fun recipe for the kids to help with making.  I am all about kids in the kitchen.  Not only to learn to cook, but the conversations and fun that takes place.  I digress, but what a cake mix and some canned icing and tubes of decorating gels can do for bonding!

Back to the chicken…  This recipe is easy.  If rain or extreme heat is going to be in the forecast for your party plans this summer, then this recipe might just do you well.  When it’s too hot to go out and stand at a grill, this chicken will give you the feeling of outdoor food, but cooked in your oven.

This is going to be on my 4th of July menu with the cucumber salad recipe and a few other favorites.  As I am celebrating this 4th of July, I will also be singing Lee Greenwoods “Proud To Be An American”.  I hope you try this recipe and let me know if it is going to be on your summer menu.  Later.

Do You Like Cucumbers?

Well, if you do , you may just like this little recipe.  Probably, many of you already make something like this, but if not you are in for a real taste treat.  Cucumbers and summer just go together.  There is nothing like a fresh cuke right out of the garden.  Bite into it and the crisp and crunch, not to mention, the flavor and aroma are out of this world!

This recipe is very simple and ohhhh so easy.  It is perfect for any occasion.  Grown-ups to kids will like this one! Why not try it for the upcoming 4th of July?  It could be a hit at your picnic, b-b-q or swim party.  Enjoy!
