Sauerkraut and Potatoes with Pork Hocks meat?
Okay, I have to be the first to admit that I have never cooked pork hocks. The idea kinda turned me off at first. I love ham, pork chops, pork sirloin roasts, etc., but, the thought of eating the meat from the leg of a hog left me a little unsettled. Not sure why, but it did.
So, I started out on a journey to eventually use the hocks. I kept looking at them in the freezer, picked them up, shuttered and put them down and closed the freezer. Now mind you, my brother gave them to me, so you would think I would have no problem with my hubby and me consuming them. Soooo not true!
So, this past Sunday, I decided to look on the ever amazing internet and find recipes for making ham hocks. Lucky me. I did! I chose the most simple way to make them. I cooked them on low for 5 hours. Yes, five hours. I am always afraid of undercooked pork. The recipe only said to cook them for 1.5-2 hours. They are done…
Well, one of the recipes called for using collard greens. We eat them, but a serving and we are good for the year. The next option was using navy beans. No, not picking and soaking beans. The third was perfect for us and me. The recipe was for sauerkraut. Yum!
So, after cooking the hocks and buying sauerkraut the other day, I continued on with my adventure. We love sauerkraut and potatoes, so I decided we would pull the meat and add it to the sauerkraut and potatoes after they cooked. Well, I must tell you that it is fabulous! My advice to you is to not shy away from the foods you have not eaten just because of the way they look or your preconceived thoughts on a food item.
Buy ham hocks and get cooking!
